This is my summary of a recipe in this book:
the student vegetarian cookbook (results 2 and 3; two editions, my recipe was in the earlier '05 version)
makes 4 burgers
nice with ketchup and a salad on the side
1/4 onion
1 garlic clove
30g walnut/mixed nut pieces
6-8 sprigs parsley
1 can (400g) green lentils
1tsp dried thyme
pinch dried sage
40g fresh breadcrumbs
115g cheezly (/cheese)
1 no-egg ogran powder (1 beaten free-range egg)
2 tbls flour
salt & pepper
oil
1. peel and chop onion and garlic. chop nuts. finely chop parsley.
2. rinse lentils
3. put lentils, onion, garlic, nuts, all herbs, grated cheese, egg and breadcrumbs into blender with salt and pepper.
4. blend ingredients lightly, keeping mixture lumpy, not making too smooth and losing texture.
5. flour up a board leaving a pile of flour on the side ready for next stage. flour up hands.
6. form mixture into 4 balls then press on both sides to form burger shape. roll burgers about in flour and add salt and pepper on top.
7. put burgers into frying pan, making sure it isn't crowded (4 should fit nicely onto a medium-sized one). Fry on one side for about 5/6 minutes then on the other side for a max of 5 minutes. Leave to fry for a while to begin with as moving the burgers too much before they're crisp may make bits fall off.
